Nettle Soup
Ingredients
- 4 T. butter
- 1 medium onion, chopped
- 1 lb. young nettle leaves
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 4 cups chicken stock (preferably homemade)
- salt and freshly ground pepper
- 1 1/2 cup cream
- few gratings of nutmeg
Cooking Instructions
1. Saute onion in butter.
2. Wash nettle and chop coarsely.
3. Stir in garlic and nettle.
4. Add potatoes and coat with butter. Then add stock and seasoning.
5. Blend soup in blender or with hand held blender.
6. Serve hot soups with with fresh cream and season with nutmeg.
