Fresh Tomato Yogurt Dressing

Ingredients

  • This dressing responds well to optional extras such as a sliver of fresh onion, a chunck of feta cheese, fresh parsley or cilantro, or chopped sun-dried tomatoes. Feel free to experiment.
  • 2 Roma tomatoes, peeled and chopped
  • 1/4 c. cold pressed extra virgin olive oil
  • 1/4 c. plain yogurt (or homemade)
  • 2 T. apple cider vinegar
  • 2 T. lemon juice
  • 1/2 t. mustard powder
  • 1/2 t. oregano
  • 1/2 t. basil
  • 1/4 t. black pepper
  • Dash of cayenne pepper and celtic sea salt

Cooking Instructions

Put chopped tomatoes, lemon juice and vinegar in blender and blend at high speed. Add remaining ingredients, blending together at medium speed. Chill overnight.
